Instructions
Cut the melon into pieces and mix very well with the blender or, as in our case, with the Thermomix.
Once we have crushed the melon, we start adding with a blender or working Thermomix, soft olive oil or fruit extra virgin olive oil, which is not very “bitter”, because otherwise it would spoil the end result.
Add a pinch of salt and continue to beat the mixture until we get an emulsion.
Keep for several hours in the refrigerator.
Arrange the gazpacho melon on a plate or Martini cups, add a few cubes of ham and garnish with a few colored leaves and lime peel, the latter being optional.
