Lentils are one of the most popular dishes with legumes. You can be accompanied by various ingredients from classic lentils with chorizo even more exotic like a curly lens. In this recipe we offer some vegetarian lentils with traditional (and very healthy!) vegetable sauce: onion, black pepper, leek, carrot, spinach …
Ingredients (4 people):
- 300 g of lentils
- 1 red onion
- 1 green pepper
- 2 cloves garlic
- 1 through
- 2 carrots
- 250 g spinach
- extra virgin olive oil
Preparation of the recipe for lentils with vegetables by Carlos Arguiñano
Peel the garlic cloves and onions, cut them into small cubes and put them to stew in a hurry with a trickle of oil. Clean the leeks, remove the lower part (hair), the upper part (green) and the first layer. Cut it into thin quarter moons and add it. Peel the carrots, cut them in the same way and turn them on. Remove the stem and the seeds of pepper, cut it into cubes and add it.
Saute vegetables in 5-10 minutes.
Cut the tomatoes halve, grate it and add it to the pan. Saute a little and add the lentils. Season, cover with plenty of water, close the pot.
Cook the lentils during 15 minutes from the moment the valve rises. When you lower the valve, open the pot.
Wash the spinach, remove the stem, cut them into small pieces and turn them on. Bring to a boil 3-4 minutes and add to the lens.
Serve the lentils with vegetables and garnish the dishes with a little parsley leaves. Carlos Arguiñano’s style!
When you go to cook lentils, you need to cook them in a lot of water, as they absorb a lot during cooking.
