La Viña cheesecake. Real madness !: Presentation
The world-famous La Viña cheesecake, served at La Viña Restaurant in San Sebastian, is a real treat. You will see how easy it is to prepare and what a wonderful result for your palate. It turns out a very beautiful cake, for 10 or 12 servings, at your choice I allow the quantities to be halved … but I also tell you that it is so rich and so soft that it will fly away.

For 10 to 12 servings
- 1 kg of cream cheese type Philadelphia
- 7 large eggs
- 400 g sugar (1 cup and a half)
- 500 ml cream or heavy cream (2 cups)
- 1 tablespoon flour (25g)

La Viña cheesecake. Truly CRAZY !: Preparing the recipe
1. – Preheat the oven to 210 degrees with heating up and down and without air.
2.- Prepare the form. I used a movable form that is 25 centimeters in diameter and 7 inches high. Wet a sheet of greaseproof paper or parchment paper under the tap. Drain the paper well and adapt well to the shape. You will see that when wet, it adapts perfectly to the shape.
3.- Prepare the cake. Put the whole cream cheese in a large bowl and add the sugar. Mix well with electric or hand stirrers until cream remains. Add the eggs, one at a time, and mix well to include them one at a time. Add the flour through a sieve so that there are no lumps. Stir again and add the cream little by little, stirring constantly.
4.- Pour the cake into the form. Smooth the surface with a putty knife.
5.- Bake in the second of the five levels of the oven at 210 degrees with heating up and down and without air for 50 minutes. After 30 minutes of baking, as it will already be baked on top, put aluminum foil so that it does not burn.
6. – Turn off the oven and let the cake cool inside with the door open for four or five hours. Cover it with aluminum foil and put the cake in the refrigerator overnight.
7. – Unmold. Open the form, remove the paper and place it on a plate using the paper. To remove the paper, break a piece and remove it very carefully. You are now ready to enjoy it.
My tips for making La Viña cheesecake:
You can use a full tablespoon of flour or cornstarch.
The cream, in some countries is called a heavy cream or whipping cream. It is very important that it contains at least 35 percent fat.
If you want it to be softer in the middle, you need to bake it for 40 minutes instead of 50.
A very big cake comes out. If you want to make the cake smaller, you can make it using half the quantities. Instead of 7 large eggs, you should use 4 medium ones.
