How to make chicken in a pepitoria, a traditional recipe
Today in the Family Kitchen with Javier Romero I will teach you how to cook chicken peppery. Homemade and traditional stew, perfect for everyday meals, because it meets the conditions for it, that is, it is a cheap dish and very easy to prepare, as long as you follow the instructions I give you as much in the video as in a written explanation.
Ingredients for 6 people
We will start cooking the chicken in a pepitorium by cutting the onion and garlic into slices (this is optional, you can chop them as you wish). Then we will put everything to fry in a flat pan with olive oil covering the bottom and a little salt. When the onion starts to become translucent, add the carrot and red pepper, cut into small pieces and let all the vegetables cook over medium-low heat.
In a simulated way, we will season the chicken legs, flour them and fry them in a pan until they turn golden brown.
When the vegetables are half done, add the freshly ground black pepper and white wine. We will cook slowly until the vegetables are completely cooked and then we will put the fried chicken.
Then we will pour enough water to cover the chicken to about half, and we will add the finely chopped fresh rosemary leaves. Then we will put the lid on the casserole and let the stew cook over medium heat for 50-60 minutes.
For about 15 minutes, to finish the chicken in the pepitoria, we will crush some fried almonds in a mortar and add them to the stew together with the mushrooms (pre-cleaned and with the cut stem at the level of the cap).
Once the stew is almost done, we will peel the boiled eggs and add sliced to a size to our liking. Then we will cover the casserole again and let the chicken rest in the pepitorium for another 10-15 minutes, with the fire off, before eating it.
