1.- Prepare the dough. Put all the flour in a bowl. Make a small hole in the center with your hands and add the sugar, yeast, butter and water. Add the salt in one corner. Stir a little and just add the water. Stir well with a spoon until you can continue to stir in the bowl.

2.- Transfer the dough to the marble. Flour the work surface and pour the dough over the marble. Connect the dough with your hands. At first, it is normal for it to stick to your hands. Knead with your hands for about 10 minutes. You can also knead it in a robot. If you find it difficult to knead with your hands, alternate periods of 1 minute kneading with a 10-minute break.

3.- Let the dough rest. Brush a bowl with a little olive oil. Put the dough inside and leave it covered with plastic wrap so that the dough does not dry out. Leave to stand for about an hour.

4.- Shape the rolls. Spread a little flour on the marble and turn the dough. Roll out the dough with your hands and divide it into portions. First, half. Then divide it into quarters and each of the quarters in sequence by 4. You will get 16 muffins of 50 grams each. Form a ball with each of the pieces by folding the dough on top of yourself.

5.- Bake the rolls. I used a cupcake tray. Lubricate the pan with a spray to release mold or oil. Place a muffin in each of the spaces.
