There is nothing better than good fried eggs to accompany one of the recipes that most represents the summer, Homemade Leek.
Pisto is a traditional dish of Spanish cuisine, consisting of fried vegetables, probably most available during the summer season in the garden.
However, ratatouille is one of the simplest, traditional and delicious recipes that we can prepare to taste in different ways, hot or cold.
As we have already told you only a few “simple” fried eggs, fish or grilled meat, with freshly cooked pasta, ratatouille is the main ingredient in endless preparations.

Wash and cut the tomatoes into small pieces in a saucepan.
Drizzle with string extra virgin olive oil and a pinch of salt.
Put the casserole on the fire and let the tomatoes cook on low heat for 30 minutes. Stir from time to time so that the tomato does not stick to us.
While the tomato is making, wash and cut the pepper and onion into small pieces, which we will peel beforehand.
Put a pan on the fire and add 5 tablespoons of extra virgin olive oil.
Add the onion and pepper, cover and let it cook over medium-low heat for 20 minutes, stirring occasionally.
Peel the zucchini, cut into thick slices, and they in turn into sticks.
We cut these canes in the shape of a cube.
Put the zucchini pieces in a saucepan, pour water and season to taste.
Put the pot of zucchini to cook for 10 minutes over medium heat. Zucchini should not be overcooked or undone.
So when you see that it is soft, remove from the heat, drain and reserve.
After preparing the fried tomato, we go through raisin puree, never through the mixer or Thermomix, because it will remain pink, nothing to do with the characteristic red color of the gun, directly on the casserole.
Add the poached vegetables and boiled zucchini, mix gently.
We return to the fire (medium-low), as soon as the “bubble” begins, we adjust the salt point, if necessary. If it was a little sour, we would add a pinch of sugar (white or brown).
Let it work for another five or ten minutes.
Remove, leave to temper, serve and season with a little fried eggs, grilled bonito, a little fresh boiled pasta, etc.
