The Truffles and Recipes Guide is another book in the saga, launched with great editorial success last year under the title Mushrooms. Guide and recipes. Now this year, the same authors of the text and photos from then, Sergio Azagra, Jose de Unya, Emilio Ubieto and Mikel Alonso, have come together again to develop this great book.

In this book, Truffle’s universe is viewed in an intimate and at the same time global way.

Truffles have always been a mythical mushroom, eagerly and intelligently pursued by man for many centuries and are now grown by humans.

With this book, its authors try to change the prejudiced (and almost always wrong) vision of this expensive mushroom, collected by unusual methods with dogs and fences, which is very unaesthetic in its external habit for the user, so that after reading it, it seems enriched and let’s see what is this mushroom, full of unique flavors and aromas, so that it takes up space in our kitchen.
From a very concise point of view, the publication begins with a historical review, conducting a brief review of the study of this fungus over time. Then in the next section his conceptual and terminological approach is adopted.

Continues with the general provisions of its anatomy. Later, the portrait and the detailed account of twelve types of truffles that deserve special gastronomic treatment (with special emphasis and extension on “our” Tuber melanosporum or “Black Truffle”, the most collected and consumed in our geographical area), but without to ignore other similar species that can lead us to confusion.
