Recipe for a sandwich with chicken, zucchini and blue cheese

Joseba Arguiñano explains how to grill chicken breasts and zucchini with blue cheese, dehydrated tomatoes and watercress, dressed with vinaigrette with honey and walnuts.

This gourmet sandwich is very easy and quick to prepare and can be a good option for dinner or to go if you eat out.

Ingredients (1 sandwich):

  • 3 chicken breast fillets (thin)
  • 1/2 loaf
  • 50 g of pure watercress
  • 1/4 zucchini
  • 3 tomatoes, dried in oil
  • 30 g of blue cheese
  • extra virgin olive oil
  • Sol
  • Pepper
  • oregano
  • For vinaigrette:
  • 50 ml extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon honey
  • 4 walnuts, peeled and chopped
  • Sol

Preparing the recipe for a sandwich with chicken and zucchini:

First, cut 3 slices of zucchini and season them. Salt and pepper the chicken breasts.

Cook the chicken and zucchini on the grill with a drop of butter. Sprinkle with a little dried oregano.

While cooking, cut the bread lengthwise with a serrated knife.

Place the grilled chicken breasts on top of the bread and top with the zucchini, sun-dried tomatoes and blue cheese (cut into rectangles).

For prepare the vinaigrettePut honey, Modena vinegar, chopped walnuts, oil and a pinch of salt in a saucepan. Close the jar with the lid and shake well until everything is integrated.

Put the cleaned watercress in a bowl and season with vinaigrette.

Finally, place the seasoned watercress on top of the remaining ingredients and close the sandwich.
