  • 250 g flour (2 cups)
  • 4 L eggs (large)
  • 150 g sugar (1/3 cup)
  • 60 ml milk (1/4 cup)
  • 60 ml oil (1/4 cup)
  • 100 g butter (1/3 cup)
  • 10 g baking powder or baking powder (1 tbsp)
  • Peel 1 lemon
  • 120g fresh or frozen blueberries

1. – Melt the butter in the microwave at full power for half a minute. Be careful to cover it so that it does not spray.

2.- Prepare the dough. Put the four eggs in a bowl and add the sugar. Beat well with a wire mixer or hand mixer. When the mixture is very fluffy, add the milk, oil, melted butter and grated lemon peel. Beat again Now include the flour together with the baking powder or baking powder sifted through a sieve. Beat again until the flour is integrated. Now add the pre-washed blueberries. Stir a little with a spatula so that they are distributed throughout the dough.

3.- Store the dough in the refrigerator for at least an hour and covered with plastic wrap.

4.- Prepare the baking tray for the muffins. I used a cake pan. Insert a capsule into each cavity.

5.- Preheat the oven to 220 degrees with heating up and down and without air.

6. – Fill the capsules. Stir the dough a little with a spoon after removing it from the refrigerator. Fill each capsule with two tablespoons. Fill up to three quarters of the capsule. Try to leave the blueberries sunk, because this way the surface will not burn.
