The Logroño Conference Center and Auditorium, Riohaforum, will host the biennial meeting of Spanish chefs, the Euro-Toques Assembly, on 7 and 8 April 2008.
This association, which in Spain unites about eight hundred chefs and more than 3,500 worldwide, will celebrate the “Euro-Toques Spain Assembly” in Logroño.
A great event that takes place every two years, in which national chefs share concerns in the sector, most of them focused on knowing what skills are needed to practice the profession of “professional chef”.
As one of the association’s concerns is that they are all defined as ‘cooks’, from one who completes hospitality training to one who frys burgers at Burger King and does not have a hospitality title, except for the food guide , food, of course.
To avoid this, they will seriously discuss the need to create a Professional College of Chefs, which allows behind every restaurant at a certain level to have a professional chef.
This year I award for Euro-Toques commitment, an award that will try to recognize the chef who best defends the principles of an association of professionals, which seeks to claim respect for natural products and make them compatible with the greatest respect for the natural environment.
This will be a major part of the Euro-Toques meeting, and at the same time, as a novelty in this edition, there will be a sample of local products in Riohaforum and in order not to bore the chefs’ companions, they have prepared a special program for them. which included visits to the Monastery of Yuso in San Milan de la Cogola (the cradle of the Spanish language), Escarai or the School of Hospitality in Santo Domingo de la Calzada.
And as the final culmination of the assembly, visit the Marqués de Riscal wineries and the museum of the Dinastía Vivanco Foundation in Briones, where a closing dinner will be held.
The 2008 edition already registers more than 150 professionals in Spanish cuisine, including Arzak, Arguiñano, Subijana, Ruscadella, Berasategui, Aduriz, Arola and other big stars of the national gastronomic scene.
Eurotoques is an international organization founded in Brussels in 1986 and its fundamental objectives include the dignity of the chef’s profession, consumer protection, support for raw materials and respect for Europe’s gastronomic heritage.
The organization makes it clear that behind gastronomic events and various culinary performances, such as MadridFusión or The Best of Gastronomy, there is a back room out of focus in which members of the association prepare proposals to the Central Administration, as in the anisakis crisis, or send collective complaints when the profession is refused.
Even if you don’t think you have to have a “star” to join the Eurotoques club, just be a chef.
