Easy quesada for celiac disease
Today in Family Kitchen with Javier Romero I offer you a very special recipe, because it can be tried by people with celiac disease. I have prepared an easy quesada with cornstarch so that celiacs can enjoy a delicious dessert. It is annoying for celiacs not to be able to enjoy many things because of the problem they have. Fortunately, today there are all kinds of products suitable for them and many substitutes that can be used to adapt traditional recipes. This is the case today, as I used a different flour than wheat, so the quesadilla does not contain gluten. Thus, although I must admit that this is not the same as a traditional quesada, you can enjoy a rich dessert with great taste. I recommend accompanying this cheesecake with jam or honey to give it a little contrast.
Ingredients for 8 people
We will start by placing the eggs with the sugar in the bowl of our mixer. We will kill them at maximum speed for about 5 minutes until they make an emulsion and increase in size a lot. After this time, slow down a bit and add the butter. When mixed, we will do the same with the Greek yogurt.
Now reduce the speed to a minimum and add the flour mixed with the yeast tablespoon by tablespoon. In which everything is integrated, we will add the lemon peel.
Then we will put the caught baking paper between the side and the base of a removable ring with a diameter of 26 cm. Then we will smear it with spray spray (or we will smear it with butter and sprinkled flour) and we will throw the whole mixture inside.
We turn on the oven at 180ºC with heating up and down WITHOUT a fan. When it is hot, we put the form and bake the quesada for about 35 minutes.
After this time we will take the bagel out of the oven and wait for it to cool to spill it. Do not be afraid if you see that it rises a lot or if it has a strange shape. Over time, it will come down and be flat on top.
