Dumplings from Parmigiano Reggiano

Dumplings Parmigiano Reggiano, Asian Mediterranean vegetables and ginger sauce


  1. Put the flour with a pinch of salt in a bowl, pour the water in the center and knead until you get a smooth and homogeneous dough. let it rest in the fridge wrapped in plastic wrap for at least an hour.
  2. Meanwhile, prepare the filling by blanching the Chinese cabbage in boiling salted water for three minutes.
  3. Drain, allow to cool and cut into thin strips. Stew chopped shallots with a tablespoon of oil, add peas and cook for about 10 minutes. Add the cabbage and finish cooking. The vegetables will become tender.
  4. In another pan, carefully fry the other shallots in olive oil and add the carrots, finely chopped with a robot or processor, and cook until soft.
  5. Mix the pea and cabbage filling with the mixer until creamy, then add the carrots, shallots and finally the chopped chives, grated parmesan reggiano and a generous handful of grated fresh ginger.
  6. Roll out the dough and with the help of a pasta knife make circles with a diameter of 6-7 cm. Roll them out with a rolling pin or a pasta machine (the dough should be almost transparent).
  7. Put a teaspoon of filling in each circle and fold into a crescent shape, press and press the edges to seal them and make
    typical folds of Chinese dumplings.
  8. Arrange the bottom of a bamboo steamer with cabbage leaves, place the dumplings on top and steam them. The dumplings will be cooked when they become very transparent.
  9. When done, prepare the sauce by mixing the fresh basil leaves, olive oil, sugar, soy sauce and sesame seeds in a blender. Serve hot with the sauce.
