Ingredients (4 people):
- 2 legs boiled wild octopus from Aginamar
- 400 g of rice
- 1 onion
- 1 green pepper
- 1 tomato
- 100 g of black peas
- 2 cloves garlic
- 1 glass of white wine
- 800 ml. water (or fish broth)
- olive oil
- 1 tablespoon sweet red pepper
Preparation of the recipe for creamy rice with octopus:
Chop the garlic and onion fine and green pepper of small dice.
In a saucepan, add about four tablespoons of oil and when hot, add the green pepper, onion and garlic. Season and fry.
When the onion begins to become transparent, also add the peas and bake them together with the other ingredients. Peel and dice the tomatoes. Add the diced tomatoes to the casserole and sauté.
Once you have prepared the vegetables, Add the rice and seal for a few minutes, stirring constantly. Add the red pepper, stir and pour over the white wine.
Cook for a few minutes to evaporate the alcohol and cover the rice with hot water. It is important that the water is hot prevent cooking from breaking and the rice grains open. Heat for about 5 minutes on high heat.
After the first 5 minutes of cooking, Add the cooked octopus to the casserole and season with salt. Stir well to integrate all flavors, reduce heat and cook for 13 to 15 minutes until rice is accurate.
Leave for about 5 minutes uncovered and serve this delicious creamy rice with octopus.
