Ingredients for 6 cups (150 ml.):
Development of cream from apple cream:
Cut the apple with the cream into quarters and patiently remove the seeds. Pour the fruit flesh into the blender cup.
Put the milk, cream and sugar to heat in a saucepan, being careful not to stick.
Once cooking begins, add agar agar or a sheet of neutral gelatin dissolved in cold water. Let it cook for another minute, stirring constantly with a few sticks. Remove from the heat and let it warm up.
Pass the egg custard meat through a blender or Thermomix and add it to the previous preparation when it is warm.
Stir with a few sticks until you get a homogeneous cream and distribute in cups.
Allow to cool and refrigerate for at least 4 hours before eating.
The grape garnish can be prepared simultaneously with apple cream or at the moment when we will serve it.
Both are very good.
In a pan, add the whole grapes, washed and without a fork, along with a few tablespoons of brown sugar and one aged rum.
Stir very gently until caramel is made and it sticks to each of the grapes.
Remove on parchment paper and leave to cool.
We decorate the glasses and taste.
Another way to present it is, after mixing the cream with the meat of the custard, to pour it into a mold. In this way we will get some desserts, also individual, but presented on a plate, as a sample, an image.
