Cancer and rabbit

Or what is the same, cancer and rabbit. This is the name of recipe winner in competition Written by Sandwiches by Fripan at this year’s edition of Madrid Fusion. Its author, Felix Guerrero, of restaurant Madrilenski 38 from Larumbe

Ingredients

  • 75 g soy sauce
  • 1 apple
  • 100 g of pure changro meat
  • 200 g rabbit cross
  • Bread (425 gr.), Type of bread
  • 50 g of mayonnaise
  • 5 g yellow chili pepper

Preparation

  1. Mix the shrimp meat with the mayonnaise and a tablespoon of chili until you get a creamy preparation.
  2. Cut apple cubes to an approximate size of half a cm. And include them in the previous composition.
  3. In a pan, roast the rabbit stew and add the soy sauce so that when you cut the meat.
  4. When the rabbit is ready, cut into thin medallions, about two cm. thick.
  5. Bake the bread, open it lengthwise, remove the entire crumb on top and half of the bottom of the loaf.
  6. This crumb should be crushed into a rectangle and placed on the grill so that it is crispy.
  7. To assemble the sandwich, place the changro mixture at the base of the bread, on top of it a rectangle of crispy bread crumbs and on top of the three rabbit medallions.
  8. Finish by closing with the top of the loaf.
