Recipe for fluffy cinnamon rolls
Today we celebrate at Cocina Familiar because we have a recipe for those that are spectacular, but really. They are cinnamon rolls or cinnamon rolls, a well-known sweet in Central European countries such as Austria or Germany. The preparation is quite laborious dessert, I will not deceive you, but I promise you that it is worth every second invested in the preparation of these delicious cinnamon rolls.
It is true that you can make a quick and easy version of cinnamon rolls with puff pastry. Preparation takes only 30 minutes (including baking time), but it is not the same at all. You can also spend a very fun afternoon with the children, kneading and playing with the flour. Everything will be like Christ, but no one can take the fun time with your family. I leave you with these cinnamon rolls, step by step recipe.
Ingredients for 8 people
1 – Heat the water and mix it with the oil
We start by heating 50 ml of hot water in the microwave. Then put the water in a bowl and add the butter. We start mixing and little by little the butter will soften and melt into small balls. At this point, add the egg and beat it. When we have the beaten egg, add the sugar (minus the teaspoon that we have to put in the milk with the yeast) and integrate it.
2 – Dilute the yeast
On the other hand, we need to heat the milk a little. When I say a little, it’s a little, because if it exceeds 40 degrees, we will spoil the yeast. When we have the hot milk, we take 20 g of yeast into the milk and stir to dissolve it. We will also add a teaspoon of sugar to improve the action of the yeast (we will remove this teaspoon from 50 g of dough). At this point, pour all this mixture into the bowl and integrate it with the other components.
3 – Mix everything with the flour
In another larger bowl we will put the flour. Then pour all the liquid mixture into the flour and mix with a spoon until the flour is well soaked and start to have a firm dough.
4 – Finish the dough by hand
At this point, remove everything from the bowl on a flat surface with powdered flour. We start to knead for about 10 minutes and in case the dough sticks a lot on the hands, add a little flour until it stops.
5 – Make the first leaven of the dough with cinnamon rolls
Now sprinkle flour in the same bowl in which we made the dough (large) and put it inside. Cover the bowl with a towel and leave the dough to rise for an hour to an hour and a half at room temperature.
6 – Roll out the dough
After this time you will see how the dough has increased significantly. Carefully peel it from the walls of the bowl and turn it on the same flat surface with a little sprinkled flour. We slowly crush it with our hands to get the whole aria out of it. Then we take the roller and stretch it, giving it a rectangular shape until it is half a centimeter thick.
7 – Grease the dough with butter
With the dough well stretched, melt 100 g of butter in the microwave. When you melt it, spread the entire surface of the dough with a brush, leaving a small area on each side.
8 – Sprinkle the mixture of brown sugar and cinnamon
Mix the brown sugar and cinnamon and sprinkle it over the entire surface of the dough. The oil will make everything stick together.
9 – Roll out the dough on the cinnamon rolls
With the sprinkled sugar and cinnamon, it’s time to carefully roll out the dough. We make a small fold on the side closest to us and roll from there to the end.
10 – Lubricate the fountain
Before cutting the cinnamon rolls, smear a large pan with a mold release spray. If you don’t have one, you can put greaseproof paper.
11 – Cut the rolls with cinnamon
Place the roll on a cutting board and cut rolls about 5 cm thick. You need a very sharp knife and cut carefully so as not to crush the rolls. You have to slide the knife carefully while pressing a little in the same way. While cutting the cinnamon rolls, place them on the tray with some separation.
12 – Make the second lift
When we have all the rolls on the pan, cover with a towel and let them do the second rising for 45 minutes to 1 hour.
13 – Bake the rolls with cinnamon
With the second lifting we turn on the oven at 180 ° C with heating up and down WITHOUT a fan. When it is hot, put the pan on and bake the cinnamon rolls for about 23 minutes. The time you know may depend on each oven and the thickness of the rolls. If you make them finer, logically the time will be less.
14 – Prepare the glaze for the cinnamon rolls
While the rolls are baking, we will prepare the coating. Mix the powdered sugar with the pomade butter, add the cream cheese and stir until you get a more or less homogeneous paste.
15 – Add the milk and vanilla essence
Add the vanilla essence (without overdoing it, because it is very powerful) and add a little milk. Mix well and add a little more milk until the glaze reaches the thickness we want to achieve. It cannot be very liquid because it will not stay on top of the roll. Also not very thick because it would be very heavy to eat. I recommend a midpoint.
16 – Place the glaze on the rollers
After finishing the rolls, take them out of the oven and put a little glaze on each of them. Then spread it with a spoon over the entire surface of the roll so as to make the characteristic translucent effect of the glazes.
17 – We’re done with the cinnamon rolls
