Chocolate muffins filled with white chocolate cream

This is a delicious chocolate cake full of white chocolate cream. Don’t be afraid of the title, making muffins costs less than you need to read the title. Ingredients for 8 people
We start with the preparation of white chocolate cream and for this we will put a saucepan on the fire with 500 ml of milk (minus a little, which we will use to dissolve the corn starch), egg yolks, sugar and corn starch with a small amount of milk. We will start to stir so that the yolks do not twist from the heat and when we have mixed everything well, we will add the chopped white chocolate.
Now it’s about stirring and stirring until the cream thickens. You must watch the fire because it must not boil or stick to the bottom. You should also keep in mind that when cooled, it will thicken even more, so you should not overdo the reduction.
When we reach the desired point of thickness, we will pour all the cream into a spring or bowl and wait for it to cool.
Until cool, we will prepare the muffins. We will put the egg whites with the sugar in the bowl of our mixer and start beating at maximum speed until they are at the point of snow. At this point we will reduce the speed to medium intensity and add the butter and milk.
When the butter and milk are integrated, we will add the flour mixed with the cocoa powder and the yeast tablespoon by tablespoon until we get a homogeneous mixture with the whole flour.
Then we will put the whole dough in a pastry bag and we will fill the paper cups that we will put on a cake tray, almost to the edge.
We turn on the oven at 200 ° C with heating up and down WITHOUT a fan and when it is hot we will place the pan and bake the muffins for about 15 minutes.
Then we take the muffins out of the oven and when they cool down a bit, we take them out of the holes and put them on the grill so that they don’t sweat underneath.
Once we get the muffins and cold cream, we will cut the top of the first ones and with the help of a pastry bag we will put a good layer of white chocolate cream. Then we will put the cut part on top and that’s it.
