- 150 g chocolate for desserts (Valrhona)
- 3 egg yolks
- 4 proteins
- 3 tablespoons galce sugar
- 2 tablespoons cold milk
- 75 g butter
Chocolate mousse is one of The most famous desserts of Franceto. Soft and airy, the original recipe does not contain cream or gelatin, its exceptional texture is achieved with well-whipped protein. 1.- Cut the chocolate and melt it together with two tablespoons of milk in a saucepan over low heat or in the microwave, always being careful not to burn.

3. – In a bowl with a few sticks (preferably electric) beat the yolks with the sugar until well foamed. Add the chocolate cream to the yolks, which should be cold so that the egg does not harden. Refrigerate to cool well.
4. – After half an hour, in another bowl, install the whites until they harden with a pinch of salt. For this it is preferable to use electric rods.
5.- Include the whites in the chocolate cream (which will be cold) using a spatula and movements from the bottom up so that the mixture is well aerated.
6.- Divide the chocolate mousse into separate containers and refrigerate for at least an hour before serving.
7.- Can be served with sprinkled cocoa or whipped cream.
