Chocolate and coffee

Cream, chocolate, butter, English cream, coffee … a real dessert, high in calories and filling. Rich, rich and not complicated to prepare. Of course, after eating it, go for a good walk.


  • 100 g dark chocolate at 60 ??
  • 100 g whipped cream
  • For anglaise cream
  • 80 g white sugar
  • 8 egg yolks
  • 380 g whole milk
  • 380 g heavy cream
  • For coffee cream
  • 250 g anglaise cream
  • 5 g of instant coffee
  • For the creamy chocolate
  • 250 g anglaise cream
  • 6 bar fresh dough (butter)


  1. Mix the yolks with the sugar in a bowl.
  2. Pour into a saucepan and add the milk and heavy cream.
  3. Cook over low heat (82 ºC), stirring constantly, until the cream acquires texture and adheres well to the spoon. It is important that the temperature does not rise so that the egg does not stick.
  4. Beat it for a few seconds with the mixer so that it becomes a smooth and creamy cream.
  5. Mix half of the English cream with instant coffee to get the coffee cream. Reserve in the refrigerator
  6. Melt the chocolate in the microwave at 500W, stirring occasionally.
  7. Pour 1/3 of the anglaise cream over the hot chocolate and mix well with a rubber spatula. When well connected, add the other third. Mix well and repeat the operation with the last third.
  8. Chop the fresh dough and spread it on the bottom of six glass bowls.
  9. Pour the chocolate cream on top and reserve in the refrigerator.
  10. When the chocolate cream is slightly hard, add the coffee cream and refrigerate until serving.
  11. Finish with a whipped cream coating and some chocolate pearls.
