If you have ever made gazpacho, you will know that this is one of the most refreshing and nutritious recipes for the summer. In addition, since it accepts many modifications very well, we gave it a special “touch” by adding some cherries to the gazpacho.

Time to prepare
Wash and chop the tomatoes together with the cucumber and onion.
Put in a bowl with peeled and chopped ginger.
Add 6 tablespoons of extra virgin olive oil and 2 apple cider vinegar. Season to taste.
Grind the ingredients coarsely with a mixer or Thermomix and pour the mixture back into the same bowl or casserole.
Cover the bowl with plastic wrap and let it rest in the refrigerator for at least two hours.
Shortly before the time passes, we wash and remove the stone from the cherries.
Then we grind the cherries very well with the other ingredients using a blender or Thermomix, until we get gazpacho without stumbling.
We prove that we have gazpacho to our taste, with salt, oil and vinegar.
Pass through a Chinese bowl or casserole and leave to cool in the refrigerator until later consumption.
You can accompany the cherry gazpacho with a little cod carpaccio, marinated tuna cubes or, as in our case, skewers of shrimp tails (grilled and covered with sesame), accompanied by cherries.
We serve the cherry gazpacho very cold as an aperitif, in small glasses or as a main dish, in deep plates or other types of cutlery.
