Makes 15 pancakes

  • 200 g carrots (1 cup)
  • 150 g common wheat flour (1 and 1/4 cup)
  • 100 ml milk (1/3 cup and 4 tablespoons)
  • 2 eggs
  • 50 g brown sugar or equivalent sweetener (1/4 cup)
  • 1/2 teaspoon cinnamon
  • 8 g baking powder or baking powder
  • ½ teaspoon grated nutmeg
  • 1 pinch of salt

1.- Prepare the carrots. Peel a squash, grate it and squeeze the juice.

2.- Mix the ingredients. Put the two eggs in a bowl and add the sugar. Mix well and add the milk, a pinch of cinnamon, a pinch of grated nutmeg, a little salt and beat again. Add the grated carrot, mix well and add the flour little by little. Add baking powder or baking powder and mix well until all ingredients are integrated.

3.- Cook the pancakes. Put a pan on the fire and add a little oil. Remove excess with absorbent paper. Apply the dough on the pan. Allow them to cook over medium heat on one side, turn them over when filled with bubbles, and let them cook on the other side. You can give them the size you want.
