Recipe for carrot cream with broccoli and pumpkin seeds: a nutritious and light vegetable dish prepared by Carlos Arguiñano with step by step and video!
Ingredients (4 people):
- 700 g carrots
- 2 potatoes
- 1 little broccoli
- 30 g pumpkin seeds
- extra virgin olive oil
Preparation of the recipe Carrot cream with broccoli and pumpkin seeds by Carlos Arguiñano:
Peel carrots, cut them in half moons and put them to cook in a casserole with lots of water. Peel potatoes, chop (break) and add them. Season and cook everything for 20 minutes. Pieces until you get one homogeneous cream.
Clean up broccoli and separately corsages. Put water heat in a saucepan, add bouquets of broccoli, cover the casserole and cook for 8-10 minutes.
Skip it pumpkin seeds in frying pan by spraying oil.
Distribute carrot cream on 4 plates and place a few bouquets of broccoli In each one. Sprinkle the plates with pumpkin seeds and garnish with a little parsley leaves.
