  1. Preheat the oven to 180º.

  2. Meanwhile, clean the carrots and cut them into not very thick slices.

  3. We put them in a bowl, which we will cover with plastic wrap. Prick the plastic with the tip of a knife and place in the microwave, at maximum power, for 7 to 10 minutes until the carrots are baked.

  4. While baking, separate the yolks from the whites. On the one hand, beat the egg whites until snowy with half the sugar, and on the other hand, mix the yolks with the rest of the sugar.

  5. Once the carrots are baked, mash them with a fork, mix with the oil and cedar nuts.

  6. In addition to the bowl, mix the flour, yeast, a pinch of salt, cinnamon and vanilla.

  7. Add the mixture of carrots and egg yolks to the bowl. Mix and turn the whites, little by little, using a spatula.

  8. In the end, we must have a homogeneous mixture without lumps.

  9. In a baking tray, distribute the tins to make the muffins.

  10. Fill up to one third of the form with the dough and bake for half an hour.

  11. Remove and allow to cool.

  12. Prepare the coating by cutting the white chocolate in a bowl. Add the butter or margarine and place in the microwave for 20 seconds.

  13. Remove and dissolve with a fork.

  14. Using a teaspoon or pastry bag, decorate the muffins.

  15. Finally, decorate with cedar nuts, whole or crushed.
