Recipe for brown rice with seaweed from rabbit and kombu

Josetxo Calvo prepares a recipe for brown rice with rabbit and some Kombu, seaweed originating from Japan and widely used in cooking because of its nutritional properties.

Ingredients (for one person)

  • 200 g chopped rabbit
  • 150 g SOS whole grain rice
  • 2 mushrooms
  • 1 pinch of pepper
  • ½ Onions
  • ½ carrots
  • ¼ Zucchini
  • ¼ red pepper
  • ½ lemon
  • 40 g Kombu seaweed flakes
  • 400 ml. chicken broth
  • 1 glass of white wine
  • 1 cup tomato sauce
  • paella spices
  • wild onion

Preparation of the recipe for brown rice with rabbits and kombu seaweed

I put for soaking rice for 6-8 hours.

Mark the rabbit in a saucepan by spraying olive oil until golden brown. Delete it.

Cut the mushrooms, onions, carrots, zucchini and red pepper into very small cubes. Stew them in the same casserole. Add Kombu seaweed flakes.

Pour in the white wine and allow the alcohol to evaporate. Add the tomato sauce and paella spices. Let it cook until the tomato sauce is dry and the vegetables are spread.

Turn on the rabbit and stir. Add the rice and stew it a bit. Pour the chicken broth. Season. Cook the rice for 20 minutes. Turn off the stove, cover the pot with a kitchen towel and let it rest for 10 minutes.

Place a portion of rice on a plate. Garnish with a few strips of pickle peppers and half a lemon. Season with chopped onions. Serve.
