  • 1 shallot
  • 1 clove garlic
  • 2 egg yolks
  • 1 tablespoon water
  • 100g butter
  • 150 ml only

Heat the yolks in a pile Bain-Marie (ie inside a pot of water). Add a tablespoon of water and mount them with an electric mixing wire. Pour the txakoli reduction little by little and continue beating them. Add the butter melted, season and continue driving.

Serve 4 asparagus in each dish and season them with txakoli sabayon (if you have over sabayon, put it in a boat with sauce).

Advice:

When choosing asparagus, keep in mind that they are straight and the edges are closed. Once at home, it is best to place them in a spring, cover them with a damp cloth and store them in the refrigerator.
