Apples with Bierzo wine with Lugo cheese
Carlos Nuñez covers the traditional recipe for “pears in wine”, but with a Pink Lady apple and accompanied by cream cheese.
- 100 g of Lugo cheese
- 1 liter of red wine from Bierzo
- 1 cinnamon stick
- The skin of the better half
- 200 grams of sugar
- 4 apples Pink Lady
- Fresh mint
Peel the apples and boil them whole (without slicing) in the wine with the sugar, orange peel and cinnamon for an hour on low heat. When the apples are soft, remove and drain.
Reduce the wine until thick with a syrupy texture.
Cut the apples and cheese into slices of the same size. Spread on a plate, alternating a slice of apple and one cheese. Drizzle with wine and garnish with a few leaves of fresh mint.
